Vinification
Sweet wine made the technique called vinblanc or boiled wine. Once the muscatel grape is pressed, we boil the grape must to the bain-marie and reduce the volume by a third – This way we obtain a must that is more concentrated in sugars and with new aromas. Then we ferment the must at low temperatures untill, naturally, the fermentation stops and we obtain a high-alcohol wine with natural sugar.
Cellar note
Golden colored wine with a strong tonality that presents aromas of quins, honey, caramel and a soft hint of sweet flowers. On the palate it’s a pleasant, sweet wine, with a smooth sweetnes without cloying and sensations of liquorice and quince that goes perfectly with foie, blue chesses, dried fruits and traditional Mallorcan sweet dishes such as coques de torró, ensaïmada, cremadillos, amargos, tambó d’ametlla, pastís de pobre,…..
