Winemaking
Maceration with submerged cap was done during 2 to 3 weeks at a temperature of 25°C in stainless steel tanks. Twelve months in new and one year French oak barrels. This wine has not been cold stabilized; therefore, there can be tartaric precipitations.

Tasting notes
It is a wine for ageing that is characterized by astringent and ripe tannins; intense cherry coloring; intense aromas with predominance of the fruity range (blackberry and cassis), spicy notes and pepper. The palate is fleshy with an elegant and persistent structure. It is on its best with consistent dishes, strong cheeses, red meats, game, etc. Due to its unique characteristics, it can be drunk immediately, but kept under appropriate conditions will develop new nuances in the bottle during the early years.
