Maceration and fermentation lasted between 10 and 18 days, depending on the variety, at 25 ° C in stainless steel tanks. Once the wine has been drained, the most appropriate blend is chosen and kept in aging during 9 months in American and French oak barrels of 225 liter to the desired fineness.

Tasting notes
Ripe cherry color. Powerful aromas of wild fruits with spicy hints (cocoa, red pepper, etc.) with toast notes from the barrel. Ample in the mouth, balanced and with an initial astringency that softens. It will remain in top condition during the first 5 years of bottling. Drink between 16°C and 18°C and preferably accompanied by rather consistent meals.
